Mom’s Goulash

Mom’s Goulash

1/8 tsp. Thyme
1/8 tsp. Curry
1/4 tsp. Cumin
1 to 1 1/2 Tbs. Chili powder
2 Tbs. Brown sugar
salt and pepper to taste
1 large bay leaf
1 medium green pepper, chopped
1 onion, chopped
2 garlic cloves, minced
4 cloves, whole stem
1 celery stalk, chopped
1 lb. Ground beef
1 quart stewed tomatoes
1/2 quart water (more as needed)
1 – 7oz package elbow macaroni

Brown meat in a heavy skillet. Add chopped onion, garlic, celery, green pepper, and sauté until onions wilt, or appear translucent. Add all the other ingredients. Bring to a boil. Cover and cook about 20 minutes or until macaroni is soft. Stir several times to prevent sticking. Find clove stems and bay leaf, remove before eating. Sprinkle with Parmesan cheese.
